A Peel of Onions

           Small (1" diameter) onions,
           as many as you care
           to prepare
2 Tbs      really, really good olive oil
1 Tsp      best balsamic vinegar
           Salt and pepper to taste

With a very sharp knife, cut the ends off the onions and peel away the brown outer skin. Place onions in a singles layer in a baking dish, adding the oil, vinegar, salt and pepper. Stir to coat the onions with the liquid. Cover and cook in a preheated 350F oven for half an hour.
