...turn the bird breast-up. Baste with the pan juices and recover with foil. Bake for another 10 minutes, remove foil and allow to brown for another 20 minutes. Remove bird to a serving dish and tent it with foil. Allow bird to rest for 15 minutes. Serve with pan juices. Delicious for two people!

Wines to match: Midweight to heavy reds from Valpolicella, Bordeaux, Ontario or South African Cabernet, Rioja and Navarra, to Syrah/Shiraz, big Rhônes or Châteauneuf.
