1 leg of lamb, boned and butterflied
(preserve trimmings)

4 Tbs      butter
1 cup      chopped onions
15 cloves  garlic chopped
1 28oz can plum tomatoes
4 cups     water
1 cup      dry white wine
1 cup      orange juice
4 Tbs      grated orange zest
1/2 TSP    rosemary, thyme, tarragon and savory
           SALT
