Chicken Itzá
Simmer for 30 minutes, turning chicken occasionally, and allow to cool in broth for one hour. Remove chicken flesh from the bones and place in a large serving bowl. For the dressing, combine the four ingredients in a mixing bowl. Pour the dressing over the chicken and stir well.
Serves 8 people.
Wines to match:
Chardonnay Musqué, off-dry Riesling Spätlese, Viognier, dry Rosé,
Oloroso Sherry, Moscato d'Asti, soft-tannin reds such as Pinot Noir, Gamay (Beaujolais)
and Cabernet Franc.
