Skinny Dip

...garlic should be thoroughly cooked to bring out sweetness rather than raunchiness. When eggplants are cooled enough to handle, scrape insides into food processor and add onion mixture and final 5 ingredients and process until smooth. Makes about 2½ cups.
   Tastes wonderful warm or cold and makes a great side dish for roast or grilled lamb. Dip pita crisps, raw vegetables or crackers or chips. I make pita crisps using whole wheat pita pocket bread. I cut the bread horizontally and slice into triangles which I brush with olive oil using a pastry brush and place under broiler until lightly browned. Keep a close eye on these so they don’t burn.

Wine recommendations: Semillon, Chardonnay Musqué, Merlot, Shiraz, Languedoc reds, reds from Ribera del Duero and Rioja, Malbec, Bordeaux reds.
