Slaw de Dah

6 cups      grated carrots
4 tbs       chopped fresh French tarragon
1 1/2 cups  craisins
2 Tbs       virgin olive oil
6 Tbs       cranapple juice
1 tsp       salt
            Fresh-ground black
            pepper, to taste

Peel carrots and chop into 2-inch lengths. With the grating blade in your food processor, stack the carrots horizontally in the loading tube, then process. The carrots will be almost julienned. Combine carrots in a bowl with craisins. Measure olive oil, cranapple juice and salt into a small jar. Seal lid and shake vigorously. Pour over carrot & craisin mixture ...
