Thighs Matters!

4       turkey thighs (skin on)
1 cup   cooked spinach
1 cup   fresh breadcrumbs
3 oz    soft goat cheese
1/2 cup white wine

Turkey thighs are an underrated, inexpensive treat. Using a very sharp knife, debone the thighs by keeping the knife close to the bone and cutting down, along and underneath, being careful not to break the skin. Chop the spinach, breadcrumbs and cheese in your food processor. Now, flatten the deboned thighs and spread the spinach stuffing over the thighs. Roll up and tie each thigh with two strings until each thigh looks like a small roast. It’s handy to have someone help you with this, because it’s like tying up a Christmas package.
