Beet The Heat Soup!
This is perfect summer eating and very easy on the cook. You can cheat and use bought stock, even cubes, because the beets have plenty of earthy-sweet flavor. Serves 4 very grateful guests.
Wines to match:
Sparkling Cava Rosé Brut from Spain, Rioja or Navarra red, or dry still Languedoc Rosé; Ontario Pinot Noir or red Burgundy, off-dry Riesling, unoaked Chardonnay or white Mâcon.
