The Quick and the Bread

 

Make a depression in the dry ingredients and add the liquids along with the olives, tomatoes and onions. Fold into dry ingredients just until mixed. Bake in a buttered loaf tin for 45 minutes at 350 C. When you remove pan from oven, let sit for 2 or 3 minutes before turning out onto a cake rack. Makes a dense quick bread that can be sliced thin and served with butter or preferably with a tray of creamy cheeses.

Riesling Kabinett, oaked Chardonnay or white Mâcon, Verdelho/Verdejo, Bourgueil, Merlot, Rioja or Navarra red, Pinot Noir or red Burgundy, Cabernet Sauvignon, Cahors or Languedoc red, Oloroso Sherry.
