Cover the mixture and place in the fridge for a few hours or overnight (I do overnight) so the bread and raisins will soak up the custard. Before baking in a
350 F oven you might want to add some Sherry or Calvados or even some fresh chopped fruit such as apple or pear. Bake in oven for about 1 hour until the mixture is puffy, golden brown and the custard is set.



Wines to match:
Icewine, Tokaji, Sauternes, Riesling Spätlese, off-dry or late-harvest, LBV Port, Oloroso or Cream Sherry, Madeira Sercial or Bual, Champagne Demi-Sec.
