Fish Delish

1 cup   chopped onion
1 cup   chopped fennel and/or celery
2 Tbs   fresh chopped garlic
2 Tbs   olive oil
1       16-oz can chopped tomatoes
2 cups  white wine
1       bay leaf
Pinch   saffron (optional)
2       packages of mixed frozen seafood
4       frozen filets of fish of your choice
        (not salmon or trout)
        Salt and pepper to taste (sea salt is best
        and you may want to add hot sauce)
