Fish Delish

Add tomatoes, wine, bay leaf, and saffron if using. Bring to rolling boil and add the seafood. (I partially thaw this using my microwave thaw cycle for 2 or 3 minutes). Bring mixture to a boil again. Take off heat immediately and let sit for 3 to 5 minutes until seafood is cooked. Do not overcook. Serve in warmed bowls with croutons and fresh baguette for dunking. This is a very fast comfort meal. Good enough for company, smells fabulous and everyone will love you for it on a chilly night.

Wines to match:
Spanish and Portuguese dry whites, Albariño, Viura or Arinto, Ontario, French and Chilean Chardonnays, dry rosés, Pinot Gris/Grigio, white Bordeaux, Sauvignon Blanc, Muscadet, dry Riesling, Languedoc and Rhône whites.
