Cool Chick Salad!

Poach the breasts by covering the chicken with the stock and bringing to the boil. Turn down to simmer for 5 minutes then turn the meat over then turn off the heat. Cover and let sit for at least 5 minutes longer. Check with a knife to see that the chicken is cooked through. Cool thoroughly. Makes 4 cups when diced.

Mix all of the above together with The Dressing and serve on a bed of greens. We used mâche and it was wonderful! Even republicans can use a little pomp and circumstance on occasion.

Wines to match: Tempranillo from Rioja or Ribera del Duero, Pinot Noir from Ontario, Burgundy or the New World, Cabernet Franc, red Bordeaux or Chianti Classico, Primitivo or Zinfandel.
