Serve with mayonnaise or yogurt with some fresh-chopped green onions or parsley. These hash cakes freeze well and if you reheat them in your regular oven, the crisp outside will be restored.

Wines to match: Light- to medium–bodied reds like Ontario Pinot Noir or red Burgundy, Cabernet Franc or Tempranillo, or go with a sweet wine such as a Ruby or LBV Port.
