
Deliver The Goods
			
500g    fresh chicken livers
				3       large onions, peeled and diced
				        butter
				        dry white wine or Sherry
				        rice or noodles
Precook the onions for 3 minutes in the microwave. In a frying pan, add a pat of butter and sauté the onions until they’re golden brown. Reserve off the burner. In a second pan, add butter and sauté the liver. Be careful not to overcook. The pink interior should still be just visible. Add a good splash of wine or Sherry, immediately cover the pan with a lid and remove from the burner...
