Wines to match: Interestingly, you can serve an earthy red or an unoaked white with this dish. Picking up especially well on the cheese is any Pinot Grigio, or a crisp white from Italy’s Veneto region, or perhaps a Gavi, also from Italy. Showcasing the truffly, woodsy mushroom element, an Argentinian or French Malbec or Cabernet, an Ontario Merlot or Pinot Noir, or a Rioja from Spain.
